Heres the finished peanut butter fresh out of the magimix. To make crunchy PB I whizzed up 1/3 of the nuts to chop them up a bit. After setting these aside I put the remaining nuts in the mixer with a bit of honey and some groundnut oil (I couldn’t get hold of peanut oil). It takes quite a while to blend to the right smooth texture. I’m looking forward to eating this for breakfast tomorrow!

Making peanut butter: I have shelled lots of monkey nuts and the next stage is to gently roast them in a pan. Once this is done they will get blended up in the magimix.

I had some very small cute cauliflowers in my veg box this week. After the mountain of cheese left over from the party at the weekend it had to be cauliflower cheese. I made a herb crust with some left over bread in the magimix, with some herbs and Anster cheese.

Here’s the Surfer’s pancakes I made for breakfast. For extra healthiness they have oats and bananas in. I used the magimix to whip the egg whites to soft peaks which made the pancakes nice and light.

This is my new cooking bible. I’m loving it.

Healthy dinner this evening. The green quinoa salad involved making a kind of pesto in the magimix. I blended mint, basil, toasted almonds and broccoli with a bit of olive oil. This was mixed with the cooked quinoa and served with asparagus, mixed leaves, toasted seeds and herby cheese from Devon. The recipe called for feta, but my local cheese shop recommended something a bit different.
